Elote is a wonderful addition to a summer BBQ or outdoor dinner. This is an easy side dish that accompanies burgers, chicken or steaks and can also be enjoyed alone.

Anticipate you will get a little messy eating this, so keep the napkins close at hand!

Elote (Mexican street corn)

Servings: 4

Ingredients

  • 4 ears of corn.

  • 1/3 cup crema (use sour cream if you can’t find crema).

  • 1/3 cup mayonnaise.

  • 1 clove garlic, crushed.

  • 1/2 tsp chili powder - I used 1/4 tsp ground ancho powder and 1/4 tsp ground chipotle powder.

  • 1/2 cup finely grated cotija cheese.

  • salt and pepper to taste.

  • Chopped cilantro, lime wedges and tajin for garnish.


Instructions

  • Clean husks and silk off corn ears.

  • Preheat BBQ or grill.

  • Place into a pot of boiling water and boil for three minutes.

  • Once the corn is tender, move to BBQ and grill, turning frequently until lightly charred on all sides.

  • Mix together crema, mayonnaise, garlic, chili powder, and salt and pepper.

  • Brush the sauce mixture over the corn ears and roll in cotija cheese until evenly coated.

  • Sprinkle with cilantro, a squeeze of lime and a dusting of tajin to your taste.

  • Enjoy!
